I've changed this to Thursday's recipe of the day as I had something else last night!
I thought we could try a recipe of the day. I'll get the ingredients and try a recipe a day and give a rating on it. Whenever anyone else tries the recipe, give a rating on it too.
Since my computer is down right now I can only post from work so this will be a Monday - Thursday issue.

Today's recipe is.....
Spinach Cheese Casserole
Nutrition Information Calories: 146 Protein: 17g Carbs: 10 g Fat: 4 g Saturated Fat: 3 g Sodium: 546 mg Fiber: 1 g -------------------------------------------------------------------------------- Ingredients 2 cups fat free cottage cheese 3/4 cup egg substitute 3 tablesthingys flour 1/2 cup chopped onion 1 cup shredded reduced fat cheddar cheese 1/2 of 10-ounce package frozen chopped spinach, partially thawed and drained
-------------------------------------------------------------------------------- Instructions Preheat oven to 350. Spray an 8 x 8-inch casserole dish with cooking spray. Combine cottage cheese, egg substitute and flour in a bowl. Add cheddar cheese and spinach; mix well. Place in casserole dish and bake, uncovered for about 1 hour or until lightly browned. -------------------------------------------------------------------------------- I'm going to try it tonight and will rate it tomorrow morning.
